Ingredients: •3/4 cup unsalted butter, melted •1 cup brown sugar, packed •1/4 cup granulated sugar •1 egg + 1 egg yolk, room temperature •1 Tbsp vanilla extract •1 3/4 cup all-purpose flour •3/4 tsp baking soda •3/4 tsp salt •1/2 a batch of my homemade Chocolate Ganache •48 mini marshmallows *This recipe makes 24 mini s’mores cups. Preheat oven to 350°F and spray a mini muffin pan with nonstick cooking spray. Make 1/2 a batch of my homemade Chocolate Ganache while you’re waiting for the oven to preheat. (ganache recipe is posted) This will give the ganache time to thicken a little before filling cookie cups later. In a large mixing bowl combine cooled melted butter, brown sugar, and white sugar. Stir until combined. Add in the egg, egg yolk, and vanilla extract. Mix until fully incorporated. Add the flour, baking soda, and salt. Stir until fully combined and no streaks of flour remain. Scoop 1 tablespoon sized cookie dough balls and roll in between yours hands. Place dough balls in prepared muffin tin. Bake for 8-10 minutes or until edges turn golden. Remove cookie cups from oven and press the centers down while they’re still soft to make a pocket for the ganache. Let the cookie cups cool completely before filling with homemade Chocolate Ganache. Fill the cups with about 1-2 tsp of ganache. Set your oven to a low broil. Top off each ganache filled cookie cup with 2 mini marshmallows. Now place the cookie cups back into the oven for about a minute to slightly brown and soften the marshmallows. Watch very closely or marshmallows will burn! Salted Brown Butter Chocolate Chip Cookies 🍪🎅🏽🎄☃️ Makes 6 - 10 Cookies Recipe ~ ½ cup salted butter, browned & cooled back to room temp so the texture is like regular softened butter ½ cup brown sugar ⅓ cup + 1 tbsp granulated sugar 1 egg 2 tbsp heavy cream (divided) 2 tsp vanilla extract 1 tsp baking soda 1 tsp salt 1 cup + 3 tbsp all purpose flour 1 ⅓ - ½ cups semisweet chocolate chips, mini In a small pot, melt your butter and keep on a simmer until it turns a golden brown. Take it off the heat and whisk in a tablespoon of heavy cream. It will bubble a lot and very high so do this in a taller pot (lol). After this, let it cool to room temperature, pour into the bowl you will be using and refrigerate until it becomes the texture of soft butter. Whip your softened butter with both sugars. Add in vanilla extract and the other tablespoon of heavy cream. Add in egg, whisk until fluffy and thick. Toss in the baking soda and salt, making sure it’s fully combined. Fold in your flour just until combined, it’s ok if there’s some flour not fully incorporated, it’ll be mixed in when you add the chocolate chips, since you don’t want to overmix. Add in the chocolate chips. Rest on the counter for 30 - 40 mins. Preheat oven to 360F. Place 6 - 12 cookies on a cookie pan lined with parchment paper, careful not to place them too close. Bake for 4 minutes. Keep the cookies in the oven, and reduce heat to 350F. Set a timer for 7 - 8 mins. Take out of the oven and let it cool for about 15 minutes before eating. I ended up putting all the recipes I've been looking at in this Santa Jar to make my choice easier. Welcome to my Christmas Baking Jar series! 🍪 This week's sweet treat is Christmas Crinkle Cookies! These cookies are delicious and super easy to make. Here's what you'll need to try this recipe at home: Ingredients: 1 cup all-purpose flour 1/2 cup cocoa powder 1/2 tsp baking powder 1/2 cup granulated sugar 1/3 cup brown sugar 1/2 cup butter (softened) 2 large eggs 1 tbsp vanilla paste Toppings: Powdered sugar Christmas sprinkles Sugar sprinkles Peppermint or Regular Hershey's Kisses Recipe: Combine the dry ingredients (flour, cocoa powder, and baking powder) in a small bowl and set them aside. In a hand mixer or stand mixer, cream together the softened butter and both sugars. Once smooth, add in the eggs and vanilla paste and continue mixing until combined. Gradually add in the dry ingredients and mix at low speed until combined; be careful not to overmix. Chill the cookie dough in the refrigerator for at least 2 hours. While the dough is chilling, prepare your toppings for rolling. I chose classic Christmas sprinkles, sugar sprinkles, and powdered sugar.
