Marinate chicken cubes (optional: at least 30 minutes) 2. Preheat pan on medium-high heat for 2-3 minutes then add 1 tbsp of avocado oil 3. Sear chicken for 3-4 mins per side until golden brown then set aside (don’t over crowd pan work in batches) 4. In the same pan, lower to medium heat, add 1 tbsp butter, red onions, garlic and ginger paste and cook for 3-4 mins until soft (scrape the pan to release the “fond” for more flavor) 5. Add can of tomatoes, soaked cashews, and gently heat for 1-2 more mins 6. Transfer sauce to blender then blend for 1 minute or until smooth and creamy 7. Add back creamy sauce to pan on low heat and adjust seasoning by adding more of the spice blend and fenugreek (optional) 8. Add back chicken + resting juices and a touch of honey to balance the flavors 9. Simmer on low for 4-5 mins then top with light cream and cilantro (right before serving) 10.
