Here’s what you’ll need (serves 4-5 portions)- 3 tbsp desi ghee 2 onions & 1 tsp chilli flakes, 2 tomato’s, 3 green chilli’s 1 kg boneless chicken breast Spices including : 1 tsp salt, 1 tsp black pepper, 1 tsp turmeric powder, 1 tsp chilli powder, 1 tbsp coriander power, 1 tbsp garam masala & 1 tsp crushed chilli’s. 1 tbsp garlic & 1 tbsp ginger 300ml water 1kg chicken breast 3 tbsp natural yogurt Fresh coriander & the 1 tsp ghee to finish off the dish :) Step by step- 1.) Start off the dish by chopping up your onions tomatoes, green chilli’s along with garlic and ginger. 2.) In a pan add the chopped onions to the desi ghee and cook down till slightly browns -this takes a few minutes. Follow by adding 1 tsp of chilli flakes along with the tomatoes. Follow by adding the garlic and ginger and cook together for a couple minutes. 3.) Once that’s all started to soften down and brown it’s time to add in the spices. I also add some water just to make a little sauce and bring out the flavours. (I used around 300ml) 3.) After that’s all been cooking low and slow follow by adding in the chicken and cook on a low heat until 80% cooked, since we’re using chicken breast this is a very quick process. Takes around 10 mins for the chicken to cook fully. 4.) Just before the chickens done cooking add in some natural yogurt this brings a really velvety texture to the chicken and balances out the flavours. 5.) Finish the dish by turning the heat to high and adding a spoon of the desi ghee to really elevate the flavours and have that south Asian curry taste. 6.) Creamy gochujang pasta.. I had no chicken so this had to do :) ..you could definitely replace the gochujang for some tomato puree (but you’d need some spices including Cajun some paprika and salt) Here’s what I used: 1 small onion 200ml double cream 200g penne pasta shells 2 tbsp gochujang paste + pinch of salt & Cheddar cheese (desired amount) ..I’d recommend you add some chicken or prawns to this, season it up with some gochujang pasta, some chilli flakes salt and a pinch of black pepper and it’ll be chefs kiss.
