The Ultimate Roast Potato! Crispy & Garlicy 🥔 Ingredients: - 8 Large Baking Potatoes (best are Albert Bartlett) or 2kg Maris Piper Potatoes - Half a Stock Cube - 2tbsp Corn Starch - 2tbsp Trex - 2tbsp Butter - (Or 4tbsp Fat / Oil / Animal Fat) - 1tsp Sea Salt - 5 Garlic Cloves - Finely diced: - Thyme - Rosemary - Oregano Leaves - Parsley - Generous sprinkles of Sea Salt - 1tsp Crushed Pepper Recipe: - Preheat your oven at 190C ( - Peel, cut into quarters, (or half for marris piper) and wash your potatoes - In a large pot of boiling water, add half a stock cube (I used chicken) or a generous sprinkling of sea salt - Boil your potatoes for 20-25mins before fully soft - In your roasting tray, add your butter / fat / oil, some salt and heat in the oven for 15mins - Once the spuds are ready, sieve them out and add 2tbsp of corn starch (if you can’t find that, use flour) - With a lid, lightly toss them around to gain a fluffy outer coat - Get your dish out the oven and add the potatoes into the hot butter. Butter Chicken w/ Garlic Cheese Naan 🥘🌶️🔥 Ingredients: 1k Chicken Thighs: 3 Garlic Cloves minced 1tsp Ginger Minced 1tsp Paprika / Kashmiri Chilli Powder 1.5tsp Mixed Curry Powder (Bolsts Hot Curry Powder) 1tsp Cumin 1tsp Ground Coriander 0.5tsp Extra Hot Chilli Powder 0.5tsp Turmeric 0.5tsp Salt 1tsp Garam Masala 4tbsp Yoghurt Half Lemon Squeeze 1tbsp Ghee Naan dough: 300g Self raising Flour 1stp Sugar Pinch of Salt Pinch of Pepper 3tbsp Yoghurt 20ml Oil 20ml Warm Water (keep adding) Butter: Minced garlic, coriander, salt & pepper Curry Base: 1.5 Large Onions 3 Garlic Cloves Minced 1tsp Ginger Minced 3tbsp Ghee / Oil 1 Bay Leaf 3 Cardamom Seeds 1 Star Anise 1 Cinnamon Stick 3 Pepper Cloves 0.5tsp Panch Puran 4 Green Chillies Masala: 3tbsp Tomato Puree 2tsp Mixed Curry Powder 1tsp Extra Hot Chilli Powder 1tsp Paprika 1tsp Cumin 0.5tsp Ground Coriander 0.5tsp Turmeric 1.5tsp Salt 1tsp Sugar Extra 1tsp Oil 1 Can Chopped Tomatoes 150ml Double Cream / Blended Cashews with Water 1tsp Ghee 2tbsp Butter Recipe: - Marinade your chicken for couple hours / overnight - Airfry / Grill in Oven 180C, 20 mins, or pan fry in small batches, medium heat 15 mins - Use chicken juices for the curry base - Remove your chicken, and add your curry base - Cook on medium heat with splashes of water 20 mins to prevent burning - In the meantime, combine your naan dough ingredients, knead for 10-15mins and prove aside - With the curry, add your tomato puree, curry powders and extra oil to cook the powders for 5 mins, this releases the flavour! - Add your chopped tomatoes and half cup of water, reduce and simmer for 15 mins - Whilst it cooks, roll your naans and fill with grated cheese, fold over the edges and roll again, coat in flour ready to pan cook - With your curry, remove the garam masala, then blend your curry paste with half cup of water, cook this for 5 mins, add your chicken and cream - 10mins - Garnish with cream, coriander / methi - - On a hot pan, at medium-high heat, place your naan and cook until it bubbles (2-3mins), then flip and cook again for 3mins - Off the pan, bush in garlic butter - - - - - #nishatcooks #butterchicken #curryrecipe #mealprep #DinnerIdeas #naan #mealideas #indian #fakeaway
Four Cheese Cauliflower Cheese! 🧀 Crunchy and Creamy, Tastes Elite 😫 Ingredients: - 2 Cauliflowers / Or One Large - Bechamel: - 2tbsp Butter - 4-5tbsp Flour (keep adding until nuggets of dough is formed) - 500ml Milk / 1 Pint - Pinch of Salt & Pepper - 0.5tsp Onion Powder - 0.5tsp Garlic Powder - Sprinkle of Mixed Herbs - (1tsp Paprika optional) - 0.5tsp Dijon Mustard - Red Leicester - Cheddar - Gruyère - Garlic & Herb Boursin - Chives Recipe: - Boil your cauliflower, but not until it is completely soft! - In a separate pan on medium heat, melt butter, add your flour and seasonings. Keep adding flour until nuggets of dough form. - Whisk on the heat for 3 mins to cook off the raw taste - Add your milk slowly! The first few splashes of milk will smoothen out as u keep whisking - It will form a very thick paste, just keep adding milk bit by bit until smooth - Then add the rest of your milk, whisk and let it slowly reduce on medium heat - Once thickened, on low heat add your cheeses - Mix in your cauliflower and dish up. - Top with extra cheese and chives - Bake in the oven at 180C for 30 mins minimum. Or keep roasting low and slow! (Slow roast tastes better as the crunchy top is formed and the dish becomes richer) - Once ready, let it rest before serving to set. Ingredients: Marinade: 4-5tbsp Butter 5 Garlic Cloves Minced 0.5tsp Ginger Minced 1tsp Honey / Brown Sugar 1.5tsp Sea Salt 1tsp Crushed Pepper Pinch of Nutmeg 1tbsp Mixed Herbs (Oregano, Rosemary, Thyme) 1tsp Onion Powder 1tsp Garlic Powder 1tsp Paprika 1tsp Ground Cumin 0.5tsp Ground Coriander Pinch of Garam Masala 1tsp All Purpose / Liquid Seasoning Half Lemon Squeezed Olive Oil Whole Orange Fresh Rosemary, Thyme, Oregano Sea Salt Crushed Pepper 1 Whole Onion, Thick Slices Baby Carrots Gravy: Half Stock Cube 1tbsp Butter 1tsp Corn Starch & Splash of Water Salt to taste Recipe: - Cut and wash your chicken in salt & lemon water! Cut off excess skin / fat at the neck, pluck the feathers, and on an open flame singe off the excess hair. Or scrape with a sharp knife - Pat your chicken dry! Or the butter marinade will not stick on - Split the skin of the chicken away from the meat by massaging underneath. - Stuff the skin with seasoned butter and massage through equally - Use the left over butter to the outer skin of the chicken - Stuff with fresh herbs, cut an orange in half, squeeze all over the chicken and marinade over night - Preheat the oven at 190C - On a tray, cover in olive oil, add your chicken, lay your chicken legs flat and cover in oil - Slice a whole onion (big chunks) and lay around the chicken with small baby carrots - Cover in mixed herbs, sea salt and pepper - Cover in foil and roast at 180-190C for 1.5hrs - For the first hour, keep basting in its juices and cover with foil - After the hour mark, drain yjr chicken juices out into a pot / pan, leave a little bit of the juices on the tray, and add the stuffing balls and extra butter - Roast the chicken without the foil for half hour - On a medium heat, add half a stock cube to the chicken juice and a tbsp of butter. Melt on a simmer - In a separate cup, mix corn starch and a splash of water, until fully mixed - Slowly add that in whilst whisking! White Chocolate Hazelnut & Kinder Cheesecake 🍫 Ingredients: Base: 200g Milk Chocolate Digestive Biscuits 50g Hazelnuts (blanched) 50g Salted Butter (melted) Cheesecake Filling: 330g Cream Cheese 200-250ml Double Cream 250g Mascarpone 250g Hazelnut Cream (any brand) 100g White Chocolate (melted) 50-60g (mock) Kinder Bars (Aldi / Lidl) (melted) 4tbsp Icing Sugar 1tsp Vanilla Hazelnut Ganache: 200g Hazelnut Paste / Cream 100ml Double Cream 50g White Chocolate 1tbsp Icing Sugar (optional) Topping: 100g Kinder Bars (melted) 30g White Chocolate Chopped Hazelnuts 100ml Double Cream 1tbsp Icing Sugar Recipe: - Crush your biscuits by hand to get a nice crumble - Roughly blend your hazelnuts and melt your salted butter. Add to the biscuits and melt - In a cake tin, line with butter and parchment paper along the edge and the base - Fill your base with biscuit (along the sides is optional), press firmly and chill in the fridge - In a bowl, whisk together your hazelnut cream, melted kinder bars, vanilla, icing sugar and double cream together - Do not over whisk your cream! It can split, mix at intervals to incorporate it all - Once whisked and thickened, fold in to it cream cheese and mascarpone - Fill in your cheesecake tin with the filling and chill for a couple of hours - over night - To make the hazelnut ganache, microwave half the cream and the rest of the ingredients together, mix until combined. - Then mix in the rest of your room temp cream until fully smooth - Layer this on top of the chilled cheesecake - For the chocolate layer. Ingredients (for meal prep): - 200g Wholewheat Pasta Mince: - 500g Beef (or any lean / meat) - One Onion Diced - 4 Garlic Cloves Minced - 1tbsp Paprika - 1tsp Cumin - 1tsp Garlic - 1tsp Salt - 1tsp Pepper - 1tsp Mixed Herbs - Pinch of Garam Masala - 0.5tsp Chilli Powder (optional) - 2tbsp Tomato Puree Yoghurt: - 200g 0% Fat Yoghurt - 2 Garlic Cloves Minced - Handful of Fresh Dill & Parsley - Squeeze of Lemon - 0.5tsp Salt - 0.5tsp Pepper - 0.5tsp Onion Powder - 0.5tsp Garlic Powder - Handful of Feta Crumbled Paprika Butter: - 2tbsp Butter - Pinch of Paprika - Pinch of Aleppo Chilli - Fresh parsley - Fresh tomatoes - Crumbled Feta Recipe: - Dice / mince your onion and garlic, in a pan cook altogether the mince, onion, garlic and seasonings. Let this go low and slow for a good 15mins, the mince will release its own fat / juices! - In the meantime prep your yoghurt feta sauce and wholewheat pasta - Once the beef is cooked. Either take all the mince out to make the paprika butter in that same pan.
