Anyone fancy a Burrito de Nata? 😋 Had a few goes at making these and tweaked a recipe that works so thought I’d share: Pastel De Nata’s (makes 24) The Pastry 200g plain flour 100g cold unsalted butter Pinch salt 80ml ice cold water 2 egg yolks 150g room temp unsalted butter The custard 75g plain flour 500ml milk 50ml double cream 1 tsp miso Pinch salt 250g sugar 100ml water 2 sticks cinnamon 4 peels lemon rind 1 tsp vanilla bean paste 7 egg yolks The Pastry Cube up the cold butter into 1/2 cm pieces and add to the flour with the salt. Use fingers to press the flour into the butter and keep pushing together until it vaguely resembles breadcrumbs with some bigger chunks Add the ice cold water, egg yolks and form together into a dough kneading for 3 minutes minutes then let rest in the fridge for 30 mins or more Get the rest of the butter down to room temp and soft enough to spread. Roll out the pastry to a 20 x 40 cm piece on a lightly floured flat surface with a rolling pin Get about 40% of the softened butter spread over 2/3 of the dough leaving 1/3 unbuttered Fold the unbuttered third into the middle and then the buttered other side on top of that. Cover with cling film and set in the fridge for 30 mins Roll this piece out to a 20 x 40 cm sheet and repeat by spreading 40% of the butter over 2 thirds, folding the unbuttered third into the middle then the other buttered third on top and pop back into the fridge for 30 mins Roll this piece out to a 30 x 30 sheet and, leaving a 2cm lip at the top, spread a thin layer of the remaining 20% of the butter over this sheet and roll up starting at the buttered end into a log, finishing the roll at the unbuttered lip. You should now have a 30cm long pastry sausage that you then wrap up in cling film and leave in the fridge for an hour, preferably overnight, or freeze it for whenever you need it before defrosting in the fridge for 24 hours The Custard Mix the flour with miso and a splash of the milk to form a paste, then gradually add in the rest of the milk and cream while whisking together Simmer over medium heat until thickened then add the vanilla bean paste and a pinch of salt then take off the heat Add the sugar, water, cinnamon and lemon peel to a pan and heat on high til thoroughly combined and it goes clear Tip it all into the milk mix with the chunky bits too and let cool slightly so it’s not warm to touch before whisking in all the egg yolks and pass the whole lot through a sieve to remove the chunks and lumps to just get a smooth custard and let cool The Natas Heat the oven to max temp (250C) Cut 1.25cm or 20g pieces off the pastry sausage then lightly grease and press swirl down into a cupcake tin with thumbs dipped in ice cold water pressing down and outwards dragging the pastry to the edge and up the sides of the tin (best if you don’t have long nails) It should be no more than 1 mm thick and where , and rise up the sides of the tin so it’s poking a little out the top Repeat to fill the cupcake tray and fill them all up with custard almost to the brim but not spilling over. The custard it going to rise in the oven but then also sink back down and we want them full! Put them into the oven for 10-15 minutes depending on how hot your oven is, until it’s got black spots forming on top and the underside of the pastry is deep brown and golden Let cool slightly and enjoy! #pasteldenata #desserts #portugesefood #burrito #pastry #butter #scran
