Jamaican chocolate, straight from the land and into the cup. These cocoa beans felt like jacks magic beans from the beanstalk 😂 The way I didn’t want to mess this up when I was fermenting them because I knew there was no way of replacing them! I’ve never tasted chocolate like this, so fruity and so much body. A wild garlic, honey and charred chilli compound butter, Ribeye on the bone, reversed seared with cherry wood, buttery scallops, a few prawns cooked over a coal and basted in that glorious butter!finished with the most flavoursome Caesar salad, chicken fat croutons and crispy chicken skin crunch? Wow. I can’t lie, this might just be the best steak I’ve ever had. There’s really zero need for a butter baste or loads of herbs when you bbq steakbecause the charcoal and wood takes the flavour of this meet to a different level. Grub sessions : Focaccia rotisserie chicken sandwich 🥪 Just a light one, I’ve been trying to perfect my Foccacia recipe recently (nearly there, just needs more hydration and a longer ferment!) there’s no better way than using the bread for a sandwich. Herb butter basted rotisserie chicken with CRISPY skin, caeser salad, some onions for sharpness, chicken skin crumbled ontop, honey garlic chicken fat mayo and Calabrian chilli paste. 10/10. Grub sessions: Smoked tamarind lamb chops 🐑 Smoked lamb ribs, tamarind and ginger chutney, sumac onions and minty aji verde. 4 regions of the world on one plate, yet it all makes so much sense. I can’t even explain but every level of your pallet gets hit with this one. Sweet, salty, tangy all of that! Lamb ribs are incredibly fatty, so you really need to get the flavours right and when it comes to the smoking them it’s really one of the best ways.
