Recipe below! 🍫🍦 Black Bean Ice Cream, 100% vegan, with no refined sugar or junk! You must use a Ninja Creami! INGREDIENTS: Base: 1/2 cup black beans (or more! you can even use the whole can!) 1 cup non dairy milk 2 dates (pitted) - optional 1/2 tsp vanilla extract 1 tablespoon vegan chocolate chips (I use @hukitchen which don’t have refined sugar) 2 tablespoons cocoa powder Mix In: 1-2 tablespoons maple syrup Directions: 1. In a food processor or blender, combine the black beans, non-dairy milk, dates, vanilla extract, vegan chocolate chips, cocoa powder. 2. Blend until smooth. 3. Pour the mixture into a Ninja Creami pint container. 4. Freeze for 12-24 hours. (12 hours gives a more soft serve froyo consistency.) 5. After freezing, use the Ninja Creami to spin the mixture using the Lite Ice Cream setting. 6. If you froze it for 24 hours, you may need to respin it. 7. Use the mix in feature to add in the maple syrup for a touch of sweetness. 8. Serve and enjoy! I just got a Ninja Creami and I am OBSESSED. Erewhon Raw Vegan Cinnamon Roll Copycat Recipe 🖤 Crust: 120g oat flour (1 cup) 100g pecans (1 cup) 2 tbsp + 2 tsp psyllium husk + 1/3 cup water 1/4 cup maple syrup Filling: 155g dates (1 cup) 3 tbsp maple syrup 2 tbsp water- Salt (to taste) 3 teaspoons cinnamon Directions: Soak psyllium in water for 15 minutes. Blend pecan nuts. Add all other crust ingredients. Blend until dough forms. Push out into a rectangle on parchment paper. (long side should be 25-27cm), and the thickness should be about 0.5 cm Blend all the filling ingredients. Spread a thick layer of the filling on the crust, but keep 1-2 cm at the top as is. Roll with the help of parchment paper and hands. Refrigerate overnight.
