I’m not gonna lie; staying in shape as a full-time food content creator is incredibly difficult, and leaning into my big back habits, I ended up gaining a ton of weight. So, to help with my health and fitness journey, I’m starting a series called “Meal Preps, But Vietnamese”!  The first episode in this series is what I like to call Vietnamese Chipotle, but essentially, it's an adaptation of my Lemongrass Pork Chop recipe, with some slight adjustments to make it slightly calorie-friendly. Now, I will say that I’m not as concerned about restricting my diet and excluding the foods I love and enjoy. Pho can look and taste pretty different depending on what region of Vietnam you’re in! Vietnam can generally be broken down into three main regions or Ba Mien:

Northern Vietnam In northern Vietnam, where pho is said to have originated, the dish focuses on simplicity and purity. Here, the broth is clear, lightly seasoned, and made primarily from beef bones and a few aromatics like ginger and onions. The flavors are clean, with minimal use of spices, letting the quality of the broth and the meat shine. Pho Bac tends to have thinner, flatter rice noodles and is often topped with green onions, thinly sliced beef (or chicken in some cases), and sometimes a sprinkle of black pepper. Fresh herbs are used sparingly compared to the southern version, and there are few, if any, accompaniments — you won’t find hoisin sauce or Sriracha on the table. Central Vietnam In the central region, especially around Hue, pho takes on a bolder, more robust character. Hue is famous for its spicier cuisine, and pho here reflects that. The broth is richer, with a deeper flavor profile that sometimes incorporates additional spices and chili for a bit of heat. Noodles are similar to those used in the north, but the toppings may include thicker cuts of meat and different cuts of beef to add variety. The soup’s overall profile has a savory depth that is distinctively central Vietnamese, influenced by the region's unique blend of spices and ingredients. Southern Vietnam In the south, pho takes on a more complex, sweeter profile that caters to local tastes. The broth is slightly darker and more aromatic, often seasoned with additional spices like star anise, cinnamon, and cloves. Southern pho is sweeter, sometimes due to adding rock sugar during the cooking process. The noodles are generally wider, and the bowl is packed with fresh herbs, bean sprouts, lime, Thai basil, and cilantro. We’re little backing that big back this year, so welcome back to the second episode of Meal Preps, But Vietnamese, where I show you how to make Vietnamese-inspired meal preps to help get you on track to start the year. Today, we’re making a hybrid Vietnamese/French dish called Nui Xao Bo/Stir-Fried Beef and Macaroni. This is a super quick and easy meal that is both comforting and hearty! Before we jump into the recipe, I do want to point out that my own personal goal is just to eat at a caloric deficit, while still enjoying the foods that I usually eat to make it sustainable in the long run for me. There are some easy adjustments or substitutions you can make to this base recipe to better fit your own goals and lifestyle! Healthier options include subbing out the rice macaroni for whole wheat pasta, changing the oils, or using a higher quality of beef that doesn’t require velveting. This funky dipping sauce is one of those - iykyk, kinda deals.
