Pho can look and taste pretty different depending on what region of Vietnam you’re in! Vietnam can generally be broken down into three main regions or Ba Mien: Northern Vietnam In northern Vietnam, where pho is said to have originated, the dish focuses on simplicity and purity. Here, the broth is clear, lightly seasoned, and made primarily from beef bones and a few aromatics like ginger and onions. The flavors are clean, with minimal use of spices, letting the quality of the broth and the meat shine. Pho Bac tends to have thinner, flatter rice noodles and is often topped with green onions, thinly sliced beef (or chicken in some cases), and sometimes a sprinkle of black pepper. Fresh herbs are used sparingly compared to the southern version, and there are few, if any, accompaniments — you won’t find hoisin sauce or Sriracha on the table. Central Vietnam In the central region, especially around Hue, pho takes on a bolder, more robust character. Hue is famous for its spicier cuisine, and pho here reflects that.
